Amuse Bouche

Crispy tart with wild greens and miso hollandaise

Beef tartar on a crispy potato nest

Oyster with white wine gel and yuzu

Mushroom and celeriac “lasagna”

Lobster ravioli, fennel and lobster bisque infused with lemon verbena

Black cold marinate in miso, watercress, white wine foam.

Wild boar pithivier and gravy with cranberries.

Grilled rib eye, potato lyonnaise, broccoli and madeira sauce.

Dessert

“Melomakarono” biscuit, chestnut, crémeux, vanilla cream and whiskey ice cream.
